Orange Rosemary Cheesecake
A baked cheesecake with orange zest and a whisper of rosemary, topped with candied citrus wheels.

Ingredients
- 200g digestive biscuits, crushed
- 90g melted butter
- 600g cream cheese, room temperature
- 150g sugar
- 3 eggs
- Zest of 2 oranges + 3 tbsp juice
- 1 tsp finely chopped rosemary
- Candied orange slices, to decorate
How to make it

Heat the oven to 170°C. Mix biscuits with butter and press into a lined 22cm tin.

Beat the cream cheese and sugar until smooth, then add the eggs one at a time.

Fold in the orange zest, juice and rosemary.

Pour over the base and bake 40–45 minutes until barely set in the middle.

Cool in the oven with the door ajar, chill 4 hours, then crown with candied orange.
