Blueberry Buttermilk Pancakes

Tall, tangy buttermilk pancakes with blueberries that burst into little jammy pockets. The Sunday breakfast our family asks for on repeat.

Blueberry Buttermilk Pancakes

Ingredients

  • 2 cups plain flour
  • 2 tbsp sugar
  • 1 tsp baking powder + 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 eggs, lightly beaten
  • 3 tbsp melted butter
  • 1 1/2 cups blueberries
  • Maple syrup and strawberries, to serve

How to make it

    Whisk the flour, sugar, baking powder, baking soda and salt in a big bowl.

    In a jug, mix the buttermilk, eggs and melted butter, then fold into the dry mix until just combined — lumps are good.

    Rest the batter for 10 minutes while a non-stick pan warms over medium heat.

    Ladle in the batter, scatter blueberries over each pancake and cook until bubbles set, about 2 minutes.

    Flip and cook 1–2 minutes more, then stack and serve warm with syrup and strawberries.
